There are two versions of this recipe:
- 2 cups rhubarb
- 1 1/3 cup sugar
- 2 beaten eggs
- 3 heaping tbs flour
- 1 tbsp tapioca
- 3 or 4 stalks rhubarb
- 2 cups sugar
- 2 beaten eggs
- 3 tbs flour
- 3 tbs tapioca
Cut rhubarb into small pieces. Mix sugar, flour, and tapioca together. Add eggs. Pour mixture over rhubarb in an baked pie crust or store-bought pie shell. Create lattice pie top (from scratch or pre-made pie dough) and bake at 375° for 40-45 minutes.
