German Hot Potato Salad

  • 3 slices bacon
  • 1 1/2 tbs flour
  • 1/2 cup vinegar
  • 3/4 cup water
  • 1 tsp salt
  • 2 tsp sugar
  • 1/4 tsp pepper
  • 1 large onion, chopped
  • 8 cups sliced, cooked potatoes
  • 1 hard-boiled egg

Fry bacon until crisp. When cold, break into small pieces. Blend flour into bacon fat. Add vinegar, water, salt, sugar, and pepper. Bring to a boil. Add chopped onion. Pour hot dressing over cooked potatoes. Add bacon bits and top with a mashed hard boiled egg yolk.
