Zucchini Casserole

  • 6 or 7 small zucchini
  • 3 tbs butter
  • 1 cup shredded cheddar cheese
  • 2 eggs, beaten
  • 1 large onion, diced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 cups bread crumbs

Cook zucchini whole in small ammont of water until crisp tender. Let cool. Cut into cubes. Add onion, cheese, eggs, salt & pepper and spoon into casserole dish.

Mix melted butter and bread crumbs and sprinkle over casserole.

Bake at 350° for 30 to 45 minutes.
