Erin’s Tiki Cheese Ball

  • 2 8 oz packages cream cheese
  • 1 cup sour cream
  • 4 tbs prepared horseradish
  • 2 cups finely shredded sharp cheddar cheese
  • 4 green onions, chopped
  • 1 cup Everything But the Bagel seasoning blend
  • 1 pineapple (looking for the prettiest top)
  • 2 cups pecan halves
  • Crackers for serving

Mix together the cream cheese, sour cream, horseradish, cheddar, and green onions. Wrap into a pineapple shape on a plate and chill in the refrigerator for at least an hour.

Once set, evenly coat the cheese ball with the everything bagel seasoning blend. Arrange pecan halves on the cheese ball to resemble the skin of a pineapple. Cut the top off your pineapple and arrange it at the top of the cheese ball. (The rest of the pineapple can be peeled and cored and used immediately or frozen later for blender PiƱa Coladas).
